My interpretation-
Romeo has never seen true beauty until he has seen Juliet this night. He has already fallen in love with her but he is in love with what he sees. This shows that Romeo falls in love easily and might not take the time to get to know the person.

"Death lies on her like an untimely frost upon the sweetest flower of all the field." -Capulet Act 4 scene 5
I think Capulet is trying to say that it wasn't Juliet's time to die. He uses a simile by saying death lies upon her like an untimely frost on the prettiest flower of all the field. When the frost comes on the most beautiful flower, no one would expect it. Just like no one would expect Juliet, the pretties girl, the white dove among black crows, to die. This is also dramatic irony because the readers and the audience know that she isn't dead, she just drank medicine that made he sleep for 48 hours.
